How it all Started!!

A long time ago, maybe 10 years ago, I started having "cravings" for pizza. Not ordinary "pizza-pizza" pizzas (you know what I am talking about), but real Chicago-type pizza. Now, living in the Windy City, I had two options: Buy them at the already famous pizzerias here, or create them myself. I did what any real pizza aficionado would do....I did both! I started my "pizza pilgrimage" on Friday nights, and carried it over to Saturday nights as well! Every Pizzeria considered a "staple" in Chicago, was hit! My mission: find the best! After a few weekends of pizza, pizza, and more pizza, I determined my favorite (sorry, I can't mention names!) But after awhile, those tiny little metal staples took their toll on my feet and I thought to myself, "Dave! Make your own pizza!" (Well, not in those exact words, but the concept applied, so I did!) First I tried making the dough from a mix. That was a complete failure! I remember the first pizza I made this way; the dough rose about half a foot over the pan! It was tasty, but somehow this "mystic" pizza lacked Chicago style. Next up was the frozen food aisle and the infamous bread dough. No dice that way either. After these disasters, I determined the best way to go about this was to create my own dough. This was not as difficult as it sounded, but without a mixer, it was truly a burden.....a call was placed..."MOM!" After invading her house for awhile and using her machine, I decided it would be best to purchase my own mixer. After a "few" attempts, and a lot of friends playing guinea pigs, the dough (which produces the crust!) has been perfected! I think you'll agree! |
